MEET THE CHEF
Hello! My name is Fabrizio and my culinary journey began as a child under the guidance of my grandmother in Italy. Cooking for my family, I dreamed of one day owning a small, intimate restaurant. Life took a different path when I entered the fine fur industry for a number of years, but my passion for cooking never faded. A chance opportunity in Dubai rekindled my love for the kitchen and I never looked back. From there I was fortunate to work in various distinguished restaurants across the globe from Mauritius to the Cyclades, before returning to Rome. Eventually, my dedication led me to earn a Masters in Restaurant Management and to become a Certified Sommelier, combining my love of food and wine.


OUR VISION FOR EXCELLENCE
As a native of Rome, I inherited the rich culture of Roman cuisine. Rome is where I was taught to master iconic dishes like Cacio e Pepe, Carbonara, Gricia, and Amatriciana. These seemingly simple recipes hold many secrets steeped in tradition that I've gathered from various masters throughout my career. My approach is to make extraordinary recipes accessible, with an emphasis on preparing meats and fish as though they were jewels, enhanced by traditional Tuscan, French and other Mediterranean sauces and flavors. My grandmother's advice—respect every ingredient, use only the freshest herbs, and always adjust the salt as necessary. These principles guide me in my vocation still today, ensuring that each dish is rooted in the Italian tradition excellence, never underestimating the importance of the seasonality of the finest ingredients.

We are so grateful to Chef Fabrizio Flammini for his generous + highly coveted donation of a four course dinner paired with wines donated by Mike and Val Thompson in support of our Soiree on the Bay event, in support of the Children’s Volunteer Health Network. The lucky winners raved about the perfectly executed evening by Chef Flammini paired with amazing wines from Thompson 31 Fifty Wines. Moreover, this donation brought in $8000 during our live auction, an amount that helps CVHN deliver preventative health care to children in need in our community. We are able to “say yes” to so many more children thanks to the giving spirit of people like Fabrizio.
